How OhCrisp is made: a slow vacuum cycle, and an honest piece of fruit.

We started with a small, slightly impractical wish: to be able to eat any fruit at any time, anywhere. Mango in winter. Lychee on a long flight. Strawberries on a Tuesday morning that did not feel like a Tuesday morning. Real fruit, ready when we were.

Most of the obvious answers — drying, dehydrating, candying, juicing — gave up something important along the way. The color flattened. The flavor turned syrupy. The texture went leathery. None of them tasted like the fruit we'd just bitten into.

Why freeze-drying.

Freeze-drying takes a slow, almost meditative path. The fruit is sliced, frozen hard, and placed in a vacuum chamber. Inside, the pressure drops far enough that the ice doesn't melt — it sublimates, going straight from solid to vapor. No heat, no oil, no shortcut. Just water leaving fruit, slowly, on its own terms.

What's left is exactly what you started with, minus the water. The color stays bright. The flavor concentrates. The texture turns into a kind of airy crunch that, in our experience, makes people stop talking mid-sentence the first time they try it.

Four hours, farm to dryer.

Speed matters more than people realize. We work with growers who pick at peak ripeness and hand the fruit off the same day. From the moment it leaves the field, we have about four hours to wash, sort, slice, and load it into the freeze-dryer. After that, the cycle takes its time. We don't rush it.

  1. Picked. Ripe, bright, with all the flavor a fruit ever has.
  2. Sorted & sliced. Big pieces. We like a snack you can see.
  3. Frozen hard, then sublimated. Water leaves quietly, in the dark.
  4. Sealed the same day. Crunch in, oxygen out.
