There is a thin spoon in our R&D kitchen that we use for almost nothing else. It is for the cold-brew reduction we make twice a week — the dark, cool concentrate that becomes the soul of every Frozili. It is also for the tasting notebook that lives next to it, which has gotten progressively more poetic as we go.
Today's note, copied verbatim: "front of tongue, ice. middle, plum. back, paper, leather, time."

What we tasted, in order.
- 00:00 — first contact. A bright, almost gemstone hit on the front of the tongue. The icy layer engages immediately.
- 00:30 — bloom. The coffee opens. It tastes like a cup of cold-brew that has been sitting on a desk for ten quiet minutes, in the best way.
- 02:00 — middle. Stone-fruit notes you do not expect. A little plum. A little dark cherry. We did not put any in.
- 05:00 — quiet. The candy is now mostly a memory. A faint paper-and-leather finish lingers. This is when most people lean back in their chair.
- 07:00 — gone. The icy thread holds for another minute or so. Then nothing.

Why cold-brew, not espresso.
We tested both. Espresso reductions, while gorgeous, were too sharp inside a candy — they read as bitter where we wanted them to read as cool. Cold-brew is coffee that has decided to take its time. The acidity rounds. The chocolate notes step forward. It plays well with sweetness without being dragged into being a dessert.
What we'll do differently next batch.
The middle is too short by about thirty seconds. We are going to extend the slow-release cooling layer in F.039 by a hair, and pull the sugar slightly. We will keep the plum, even though we did not put it there.
